No-Bake Vegan Berry Protein Bites

I am head over heels in love with Larabars!!!  They are made with all whole ingredients, nothing in them is processed, and they taste AMAZING!  The only thing I don’t love about them is that the price tag makes me want to cry.  I think the price is pretty reasonable if you are buying just one (or maybe two) but if you’re looking for something to help get you through the week, it’s just not feasible… at least for me… not yet…

To solve this problem I created my very own No-Bake Vegan Berry Protein Bites.  These babies, like Larabars, are made with nothing but whole ingredients and a LOT of love.  There are only a handful of ingredients in these bites and they were so easy to make!

Here’s the finished product.  Beautiful!  Look at all those yummy ingredients smooshed together just waiting to be demolished!

To create, I pulled out the heavy duty food processor (in my case, a NutriNinja).  I started by processing the nuts first until they were broken down.  In hindsight I could have probably pulsed them a tad longer to make my end result a little smoother.  Next, I added in the rest of the ingredients and pulsed them together as well.  I needed to stop a few times to scrape the sides of the food processor to ensure an even process.

When I felt confident that my ingredients were the consistency I wanted, I removed the “dough” from the food processor and placed it in a mixing bowl for easier access.  From here I mixed the “dough” a little longer by hand to make sure that all of the almond and cashew bits were incorporated into the dates and dried fruit because it seemed a smidge too crumbly at first.  Then it was on to the final step… CREATING THE BITE SIZED BITS!

I used my hands to roll the protein bites into balls that were about an inch and a half in diameter.  The recipe will make more or less depending on the size of your protein bites.  When you have used all your “dough” just cover in plastic wrap or put in the refrigerator or freezer (personally, I didn’t like the consistency nearly as much when I stored them in the fridge).  There we have it, folks!  Easy Vegan Berry Protein Bites for the win!

I’d like to try out some other flavor combinations with my next batches.  I’m thinking some banana nut bread ones possibly.  Any other flavor suggestions?

NO-BAKE VEGAN BERRY PROTEIN BITES

Adapted from a recipe by the lovely Brittany Mullins over at Eating Bird Food
Makes approximately 20-25 bite sized bits

Ingredients:

  • 1 cup whole, raw almonds
  • 1 cup whole, roasted cashews
  • 1 cup dates, pitted
  • 1 cup dried mixed berries
  • 1 teaspoon vanilla
  • Juice from half a lemon
  • Pinch of sea salt

Instructions:

  1. Place almonds and cashews into high power food processor and pulse until they are chopped into small pieces.
  2. Add all other ingredients to the food processor and pulse until everything is well combined (you may need to scrape the sides to ensure equal processing).
  3. Transfer dough from food processor* and form into small balls using your hands. Place balls onto a plate covered with plastic wrap (will last up to 4 days), store in an air tight container in the fridge (will last 1-2 weeks), or pop in the freezer (will last 1-2 months).

Notes:

*The dough may seem a little loose or crumbly at first, but it should be sticky enough to form into balls if you mix a little by hand as well. If it still seems way too crumbly, your dates may have been too dry. Just add a bit of water (starting with 1-2 teaspoons) until the mixture is sticky enough to stay together and form into balls.
